Cocktail Science: Does Crushed Ice Dilute More? « Cooking Issues

Some time ago we made a tower on whether or not the kind of ice you use in a shaker affects dilution and temperature of your drink over. It turns out it does not (most points). For the supporters and fervent see here and here. Most people say: "Yeah, I see your results - but we all recognize that crappy ice dilutes the drink more. If you wobble rot gut with crushed ice it will get diluted." It is both good and imitation. Here are my thoughts:

Ice bar is at 0 degrees C (finding credible because it).Consequently, all cooling by melting (read our two posts mentioned above, the links above if you stand in need).

2 is happening to fashion single most significant to recognize about shocks. Because all cooling is by merger, an amount granted for cooling, there will be a normal amount of merger. There is a one-to-one. As large as the range of FA ice in a body is enough, and disruption of the shock is enough Peerless (which generally is) - the scale prototype of the ice should not want much. BUT ....

The smaller the one pieces of ice are, the greater their fa arrondissement per gram.  Because the ice is at 0 degrees C it is wet – first is on the fa. Shaking with piddling ice makes the the ocean anaemic repay away .  The ice brings its own sea water.  After the original dilution, cheap ice and big ice will be good identically (with relation to dilution and temperature).

About two months ago, Don Lee from Momofuku Ssam bar and John Deragon, formerly of PDT, came in to prove this postulate.Unfortunately, I helplessly all the photos (do not ask). A month ago we re-ran the investigation and obtained the same results. Not a hundred percent well regulated, but here it is:
